Ingredients
- 4 chicken breast halves (about 680g)
- 120 ml lemon juice
- 60 ml olive oil
- 2 tsp (10 ml) dried parsley
- seasoning salt, to taste
- ground black pepper, to taste
- 5 ml garlic powder
Instructions
- Collect all necessary items.
- Heat up an outdoor grill to a medium-high setting, ensuring to lightly grease the grill grate.
- For each piece of chicken, sandwich the breast between two pieces of plastic wrap or parchment paper on a cutting board. Use a meat mallet or a rolling pin to gently flatten each piece to a thickness of 1/2 inch.
- Combine lemon juice, olive oil, dried parsley, seasoning salt, black pepper, and garlic powder in a large resealable bag. Add the chicken, expel as much air as possible, and seal tightly. Gently knead the chicken to evenly disperse the marinade. Let the chicken soak in the refrigerator for a minimum of 30 minutes, up to 12 hours.
- Heat the grill to medium-high and lightly coat the grate with oil.
- Position the chicken breasts with the smooth side facing down on the hot grill; cook with the lid on until the chicken is no longer pink and the juices run clear, approximately 5 minutes per side. Ensure an instant-read thermometer shows at least 165 degrees F (74 degrees C) in the center.
- Move the chicken to a cutting board and cover it loosely with aluminum foil. Allow it to rest for 5 minutes.
- Offer with lemon wedges.
