Ingredients
- – 4 chicken breasts, 150-180g (5-6 oz) each
- – 2 tsp (10 ml) olive oil
- – 1 1/2 tbsp (23 ml) brown sugar
- – 1 tsp (5 ml) paprika
- – 1 tsp (5 ml) dried oregano or thyme, or other herb of choice
- – 1/4 tsp (1 ml) garlic powder
- – 1/2 tsp (3 ml) each salt and pepper
- – Finely chopped parsley
Instructions
- Set the oven to 425°F/220°C (200°C for convection).
- Flatten the chicken to a thickness of 1.5cm / 0.6″ at the thickest section using a rolling pin, meat mallet, or even your hand (this ensures even cooking and tender meat).
- Combine the spices.
- Cover a baking tray with foil and parchment paper. Lay the chicken flat on the tray with the smooth side down. Drizzle approximately 1 teaspoon of olive oil over it, then spread it with your fingers. Sprinkle the spice mix over the top.
- Turn the chicken over, pour another teaspoon of olive oil on it, spread with your fingers, and sprinkle the seasoning mix, ensuring to cover as much of the surface as possible.
- Cook in the oven for 18 minutes until the surface turns golden, or the internal temperature reaches 165°F/75°C when checked with a meat thermometer.
- Take the chicken out of the oven and promptly place it on serving dishes.
- Allow it to rest for 3 to 5 minutes before serving, optionally garnished with freshly chopped parsley. Served alongside Garlic Butter Rice with Kale if desired.
