A creamy, rich slow-cooked chicken dish with garlic and Parmesan that’s perfect for a keto lifestyle.
Ingredients
- 4 boneless, skinless chicken breasts or thighs (about 1.5 to 2 lbs)
- 1/2 cup unsalted butter, melted
- 1 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 1 tbsp garlic powder
- 1 tbsp Italian seasoning
- 1 tsp onion powder
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper (or to taste)
- 1/2 tsp crushed red pepper flakes (optional, for heat)
- 2-3 cloves garlic, minced
- Fresh parsley, chopped (for garnish)
Instructions
- Place the chicken breasts or thighs at the bottom of the slow cooker.
- Whisk together the melted butter, grated Parmesan cheese, heavy cream, garlic powder, Italian seasoning, onion powder, salt, pepper, and crushed red pepper flakes in a bowl.
- Stir in the minced garlic until everything is well combined.
- Pour the sauce mixture over the chicken in the slow cooker, ensuring the chicken is well coated.
- Cover and cook on low for 4-6 hours or until the chicken is tender and fully cooked.
- Remove the chicken from the slow cooker once done.
- Shred the chicken with two forks if desired or serve it whole, pouring some of the creamy sauce over it before serving.
- Garnish with freshly chopped parsley to enhance flavor and presentation.
Notes
For a thicker sauce, remove the lid for the last 30 minutes of cooking. You can also mix in xanthan gum for thickness.
