Description

A creamy, rich slow-cooked chicken dish with garlic and Parmesan that’s perfect for a keto lifestyle.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs (about 1.5 to 2 lbs)
  • 1/2 cup unsalted butter, melted
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1 tbsp garlic powder
  • 1 tbsp Italian seasoning
  • 1 tsp onion powder
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper (or to taste)
  • 1/2 tsp crushed red pepper flakes (optional, for heat)
  • 2-3 cloves garlic, minced
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Place the chicken breasts or thighs at the bottom of the slow cooker.
  2. Whisk together the melted butter, grated Parmesan cheese, heavy cream, garlic powder, Italian seasoning, onion powder, salt, pepper, and crushed red pepper flakes in a bowl.
  3. Stir in the minced garlic until everything is well combined.
  4. Pour the sauce mixture over the chicken in the slow cooker, ensuring the chicken is well coated.
  5. Cover and cook on low for 4-6 hours or until the chicken is tender and fully cooked.
  6. Remove the chicken from the slow cooker once done.
  7. Shred the chicken with two forks if desired or serve it whole, pouring some of the creamy sauce over it before serving.
  8. Garnish with freshly chopped parsley to enhance flavor and presentation.

Notes

For a thicker sauce, remove the lid for the last 30 minutes of cooking. You can also mix in xanthan gum for thickness.
