Description
Savory and slightly spicy chicken skewers marinated with ginger, garlic, and gochujang, perfect for grilling.
Ingredients
- 1 1/2 lbs. boneless, skinless chicken thighs
- 2 tsp fresh ginger, finely grated
- 2 tsp minced garlic
- 3 tbsp low sodium soy sauce
- 3 tbsp brown sugar
- 1 tsp sesame oil
- 1 tbsp rice vinegar
- 2 tbsp gochujang
- Chopped green onions (optional garnish)
Instructions
- Cut chicken into 1 1/2 inch cubes and toss in a bowl.
- Whisk together remaining ingredients (except chopped green onions) to create the marinade.
- Pour half of the marinade over the chicken and mix to coat thoroughly.
- Cover and place in the fridge to marinate for at least 240 minutes (or up to overnight).
- Cover the remaining sauce and put it in the fridge for later basting.
- Thread the chicken onto skewers when marinating is complete.
- Preheat the grill to medium heat.
- Place skewers on a lightly oiled grill once hot.
- Turn the skewers every 3-4 minutes until the chicken reaches an internal temperature of 165°F, approximately 20-30 minutes. Baste with the remaining marinade during the last few turns.
- Remove skewers from the grill and serve with chopped green onions, if desired.
Notes
Consider adding vegetables like bell peppers, onions, or mushrooms to the skewers for a balanced meal.
