Description

Delicious grilled Korean chicken skewers marinated with ginger, garlic, and gochujang for a savory and sweet flavor.


Ingredients

  • 1 ½ lbs. chicken thighs (boneless, skinless)
  • 2 tsp fresh ginger (finely grated)
  • 2 tsp minced garlic
  • 3 tbsp low-sodium soy sauce
  • 3 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tbsp gochujang
  • Chopped green onions (optional garnish)


Instructions

  1. Cut the chicken into 1 ½-inch cubes and toss them in a bowl.
  2. Whisk together the ginger, garlic, soy sauce, brown sugar, sesame oil, rice vinegar, and gochujang to create the marinade.
  3. Pour half of the marinade over the chicken and mix until fully coated.
  4. Cover the bowl and place it in the fridge to marinate for at least 240 minutes (4 hours) or up to overnight.
  5. Store the remaining marinade in the fridge for basting the chicken.
  6. Thread the marinated chicken onto skewers.
  7. Preheat your grill to medium heat.
  8. Oil the grill lightly and place the skewers on it.
  9. Grill the skewers for 20-30 minutes, turning them every 3-4 minutes until the chicken reaches an internal temperature of 165°F, basting with the remaining sauce.
  10. Serve the skewers, garnished with chopped green onions if desired.

Notes

Marinate the chicken overnight for the best flavor. Use a meat thermometer to ensure the chicken is thoroughly cooked.
