Ingredients
- 2 boneless, skinless chicken breasts
- 1 teaspoon salt (5 g)
- 1/2 teaspoon ground black pepper (1 g)
- 1 tablespoon olive oil (15 ml)
- 2 cloves garlic, minced
- 1 lemon, juiced
- 1/4 cup fresh basil leaves, chopped (10 g)
- 2 cups cherry tomatoes, halved (300 g)
- 8 ounces fresh beef mozzarella, sliced (225 g)
- 1 tablespoon balsamic glaze (15 ml)
Instructions
- Season the chicken breasts with salt and black pepper on both sides.
- Heat olive oil in a large skillet over medium heat.
- Add the chicken breasts to the skillet and cook for 6-7 minutes on each side, until golden brown and fully cooked.
- Remove the chicken from the skillet and set aside on a plate.
- In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
- Add the lemon juice to the skillet, stirring to deglaze the pan.
- Return the chicken to the skillet and spoon the lemon-garlic mixture over the chicken.
- Sprinkle chopped basil leaves over the chicken.
- Add the halved cherry tomatoes to the skillet, spreading them around the chicken.
- Top each chicken breast with slices of fresh mozzarella.
- Cover the skillet and cook for 2-3 minutes until the mozzarella melts.
- Drizzle balsamic glaze over the chicken and tomatoes before serving.
- Serve hot, garnished with additional fresh basil if desired.
