Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon ground black pepper (1 g)
  • 1 tablespoon olive oil (15 ml)
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1/4 cup fresh basil leaves, chopped (10 g)
  • 2 cups cherry tomatoes, halved (300 g)
  • 8 ounces fresh beef mozzarella, sliced (225 g)
  • 1 tablespoon balsamic glaze (15 ml)


Instructions

  1. Season the chicken breasts with salt and black pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the chicken breasts to the skillet and cook for 6-7 minutes on each side, until golden brown and fully cooked.
  4. Remove the chicken from the skillet and set aside on a plate.
  5. In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
  6. Add the lemon juice to the skillet, stirring to deglaze the pan.
  7. Return the chicken to the skillet and spoon the lemon-garlic mixture over the chicken.
  8. Sprinkle chopped basil leaves over the chicken.
  9. Add the halved cherry tomatoes to the skillet, spreading them around the chicken.
  10. Top each chicken breast with slices of fresh mozzarella.
  11. Cover the skillet and cook for 2-3 minutes until the mozzarella melts.
  12. Drizzle balsamic glaze over the chicken and tomatoes before serving.
  13. Serve hot, garnished with additional fresh basil if desired.
