Ingredients

  • 8 oz linguine (225g)
  • 2 chicken breasts
  • 1 tbsp (15 ml) olive oil
  • 2 tbsp (30 ml) vegetable oil
  • 2 garlic cloves, minced
  • 6 roma tomatoes, skins peeled and cut into sixths
  • 1/2 tsp (3 ml) garlic powder
  • 1/2 tsp (3 ml) onion powder
  • salt and pepper
  • 2 tbsp (30 ml) lemon juice
  • 1 tsp (5 ml) lemon zest
  • 1/2 package fresh basil, about 5 extra large basil leaves, chopped
  • 1/2 c (120ml) grated cheese
  • 1/2 c (120ml) vegetable broth + more if needed


Instructions

  1. Sprinkle the chicken with garlic powder, onion powder, salt, and pepper.
  2. Sauté the chicken in a pan and let it rest until everything else is prepared, then slice into pieces.
  3. Prepare the pasta according to the package instructions, adding a few pinches of salt. Make sure to save 1/2 cup of the pasta water for later, as you’ll move the pasta directly to the sauce.
  4. Warm a large sauté pan on low heat.
  5. Pour in olive oil, add butter and minced garlic.
  6. Let the garlic cook for 5 minutes until its aroma is released.
  7. Incorporate the tomatoes and lemon juice into the pan.
  8. Cover and allow it to cook for another 5 minutes.
  9. Remove the cover and add the cooked pasta directly into the pan along with 1/2 cup of the reserved pasta water.
  10. Mix in the lemon zest, chopped basil, most of the grated cheese, and the sliced chicken.
  11. Combine everything thoroughly.
  12. Plate the lemon basil chicken pasta, garnishing with a bit more of the fresh grated cheese.

Notes

  • For a healthier choice, consider using whole wheat linguine instead of regular for added fiber and nutrients.
  • Add extra vegetables like spinach or bell peppers for a pop of color and flavor.
