Ingredients
- 8 oz linguine (225g)
- 2 chicken breasts
- 1 tbsp (15 ml) olive oil
- 2 tbsp (30 ml) vegetable oil
- 2 garlic cloves, minced
- 6 roma tomatoes, skins peeled and cut into sixths
- 1/2 tsp (3 ml) garlic powder
- 1/2 tsp (3 ml) onion powder
- salt and pepper
- 2 tbsp (30 ml) lemon juice
- 1 tsp (5 ml) lemon zest
- 1/2 package fresh basil, about 5 extra large basil leaves, chopped
- 1/2 c (120ml) grated cheese
- 1/2 c (120ml) vegetable broth + more if needed
Instructions
- Sprinkle the chicken with garlic powder, onion powder, salt, and pepper.
- Sauté the chicken in a pan and let it rest until everything else is prepared, then slice into pieces.
- Prepare the pasta according to the package instructions, adding a few pinches of salt. Make sure to save 1/2 cup of the pasta water for later, as you’ll move the pasta directly to the sauce.
- Warm a large sauté pan on low heat.
- Pour in olive oil, add butter and minced garlic.
- Let the garlic cook for 5 minutes until its aroma is released.
- Incorporate the tomatoes and lemon juice into the pan.
- Cover and allow it to cook for another 5 minutes.
- Remove the cover and add the cooked pasta directly into the pan along with 1/2 cup of the reserved pasta water.
- Mix in the lemon zest, chopped basil, most of the grated cheese, and the sliced chicken.
- Combine everything thoroughly.
- Plate the lemon basil chicken pasta, garnishing with a bit more of the fresh grated cheese.
