Ingredients
- 4 organic, boneless, skinless chicken breasts
- 60g (1/4 cup) arrowroot starch/flour
- salt and pepper, to taste
- 30-60ml (2-4 tbsp.) olive oil
- 15g (1 tbsp.) clarified butter
- 2 cloves garlic, minced
- 1/4 tsp (1 ml). crushed red pepper flakes (optional)
- 240ml (1 cup) chicken broth
- juice of 1 lemon
- 5 large leaves of basil, julienned
Instructions
- Position a chicken breast on a chopping board. With your hand holding it steady, use a sharp knife to carefully slice it horizontally, creating a thinner piece. Repeat this for all chicken pieces.
- Sprinkle both sides of the chicken with salt and black pepper as desired.
- Place the arrowroot starch/flour in a shallow dish and lightly coat each chicken piece on both sides. Arrange them on a separate plate once coated.
- Warm 2 tablespoons of olive oil in a non-stick pan over medium-high heat. Cook the chicken until it becomes golden on each side, approximately 3-4 minutes per side. Remove and set aside on a plate. If the pan becomes dry or if you have limited space, you might need to do this in batches and add extra olive oil. The chicken should only be browned at this stage, as it will continue to cook in the sauce later.
- Lower the heat to medium-low. Introduce the clarified butter to the skillet and let it melt.
- Add the minced garlic and optional crushed red pepper flakes to the melted butter, stirring for 30 seconds without letting the garlic burn.
- Incorporate the chicken broth and lemon juice into the mixture.
- Return the chicken to the skillet, submerging it in the sauce. Allow it to simmer on medium to medium-low heat for 10-15 minutes, or until the chicken is fully cooked and the sauce becomes thicker.
- Finish by scattering the julienned basil leaves over the top.
- Serve and relish the dish!
