Ingredients

  • 2 boneless, skinless chicken breasts (about 450 g)
  • 2 tablespoons olive oil (30 ml)
  • 2 cloves garlic, minced
  • 1 lemon, juiced (about 45 ml)
  • 1 teaspoon (5 ml) lemon zest
  • 1 teaspoon (5 ml) ground cumin
  • 1 teaspoon (5 ml) smoked paprika
  • Salt, to taste
  • Pepper, to taste
  • 1 cup uncooked rice (185 g)
  • 2 cups chicken broth (480 ml)
  • 1 can black beans, drained and rinsed (425 g)
  • 1 cup corn kernels (165 g)
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved (150 g)
  • 1/4 cup chopped cilantro (about 15 g)
  • 1 lime, cut into wedges


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine olive oil, minced garlic, lemon juice, lemon zest, ground cumin, smoked paprika, salt, and pepper.
  3. Place chicken breasts in a baking dish and pour the marinade over them.
  4. Coat the chicken evenly, cover, and marinate for at least 15 minutes.
  5. In a medium saucepan, bring chicken broth to a boil.
  6. Add rice to the boiling broth, reduce heat to low, and cover.
  7. Cook rice for 18-20 minutes or until tender and broth is absorbed.
  8. Remove chicken from marinade and place in the oven.
  9. Bake chicken for 20-25 minutes, or until cooked through, at 165°F (74°C).
  10. Let the chicken rest for a few minutes, then slice it.
  11. In a large bowl, combine black beans, corn, diced avocado, halved cherry tomatoes, and chopped cilantro.
  12. Fluff the cooked rice with a fork.
  13. Assemble the burrito bowl by placing rice as the base.
  14. Top with sliced chicken, black bean mixture, and any remaining marinade as dressing.
  15. Serve with lime wedges on the side.
