Description
A vibrant dish featuring juicy chicken marinated with zesty lemon and aromatic ginger, paired with a refreshing pineapple mango salsa.
Ingredients
- 1 lb chicken breast, cut into bite-sized pieces
- 1 tbsp fresh ginger, grated
- Zest of 1 lemon
- 1/4 cup lemon juice
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 tbsp olive oil
- Salt & pepper to taste
- For Pineapple Mango Salsa: 1 cup diced pineapple, 1 cup diced mango, 1/4 cup diced red onion, juice of 1 lime
Instructions
- In a mixing bowl, combine grated ginger, lemon zest, lemon juice, honey, soy sauce, olive oil, salt, and pepper.
- Add the chicken pieces and mix until well coated. Allow to marinate for at least 30 minutes.
- Heat a skillet over medium-high heat, and add the marinated chicken.
- Cook for about 5-7 minutes or until fully cooked, stirring occasionally.
- Remove from heat and let it rest for a few minutes before serving with pineapple mango salsa.
Notes
Use fresh ingredients for the best flavor. Marinating longer will enhance the tenderness of the chicken.
