Description

A vibrant dish featuring juicy chicken marinated with zesty lemon and aromatic ginger, paired with a refreshing pineapple mango salsa.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 tbsp fresh ginger, grated
  • Zest of 1 lemon
  • 1/4 cup lemon juice
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • For Pineapple Mango Salsa: 1 cup diced pineapple, 1 cup diced mango, 1/4 cup diced red onion, juice of 1 lime


Instructions

  1. In a mixing bowl, combine grated ginger, lemon zest, lemon juice, honey, soy sauce, olive oil, salt, and pepper.
  2. Add the chicken pieces and mix until well coated. Allow to marinate for at least 30 minutes.
  3. Heat a skillet over medium-high heat, and add the marinated chicken.
  4. Cook for about 5-7 minutes or until fully cooked, stirring occasionally.
  5. Remove from heat and let it rest for a few minutes before serving with pineapple mango salsa.

Notes

Use fresh ingredients for the best flavor. Marinating longer will enhance the tenderness of the chicken.
