Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup orzo pasta (200g)
- 3 tablespoons olive oil (45ml)
- 2 tablespoons fresh lemon juice (30ml)
- 1 tablespoon (15 ml) lemon zest
- 2 garlic cloves, minced
- 1 teaspoon (5 ml) dried oregano
- 1 teaspoon (5 ml) dried thyme
- 1 teaspoon (5 ml) salt
- 1/2 teaspoon (3 ml) black pepper
- 2 cups chicken broth (480ml)
- 1/4 cup chopped fresh parsley (15g)
- 1/4 cup grated cheese (25g)
- 1 cup cherry tomatoes, halved (150g)
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper on both sides.
- Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium heat.
- Add the chicken breasts to the skillet and sear for 3-4 minutes per side until golden brown.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining olive oil and minced garlic, sauté for about 1 minute.
- Add the orzo pasta to the skillet and stir to coat it in the oil and garlic.
- Pour in the chicken broth and bring to a boil.
- Reduce the heat to a simmer and add the dried oregano and thyme.
- Stir in the lemon juice and lemon zest.
- Return the chicken breasts to the skillet, placing them on top of the orzo.
- Scatter the cherry tomatoes around the chicken and orzo.
- Transfer the skillet to the oven and bake for 20-25 minutes, until the chicken is cooked through and the orzo is tender.
- Remove the skillet from the oven and let it rest for 5 minutes.
- Sprinkle chopped parsley and grated Parmesan cheese over the chicken and orzo.
- Serve hot, making sure to include some of the orzo and tomatoes with each piece of chicken.
