Ingredients

  • – 1/4 cup (60 ml) vegetable oil
  • – 1/4 cup (60 ml) lemon juice
  • – zest of 1 lemon
  • – 2-3 garlic clove crushed
  • – 2 tsp (10 ml) fresh thyme
  • – 2 tsp (10 ml) rosemary
  • – 1 tsp (5 ml) dried oregano
  • – 1 tsp (5 ml) salt
  • – 1 tsp (5 ml) pepper
  • – 4 large chicken breasts skinless, boneless
  • – wooden skewers soaked in boiling water for 30 minutes


Instructions

  1. Mix together the marinade components thoroughly.
  2. Cut the chicken into small cubes and place them in a bowl. Drizzle the marinade over the chicken, cover it, and let it soak for a minimum of 30 minutes, or up to 24 hours, in the refrigerator.
  3. Skewer the marinated chicken pieces onto the wooden skewers that have been soaked in water.
  4. Preheat a grill outdoors or use a grill pan on the stovetop, then grill the skewers, rotating every 3-5 minutes, until the chicken is fully cooked and has a golden crust on all sides.
  5. Take the skewers off the heat and let them sit for 5 minutes before serving.
