Ingredients
- 8 (198 g) bone-in, skin-on chicken thighs
- 1 medium lemon, plus more for serving
- 16 peeled garlic cloves, divided (from 1 large head)
- 1 (14 g) package fresh thyme sprigs, divided
- 3 tablespoons (45 ml) vegetable oil
- 25 teaspoons (6 g) salt, divided, plus more to taste
- .75 teaspoon (375 ml) freshly ground black pepper
- 5 teaspoons (8 ml) honey, plus more to taste
Instructions
- Start by assembling all necessary items.
- Set your oven to heat up to 425°F. Dab the chicken thighs dry using paper towels and place them aside. Slice the lemon in half lengthwise and then into thirds crosswise, removing any seeds. Use a microplane grater to finely grate four of the garlic cloves.
- In a 13- x 9-inch baking dish, lay out the lemon slices, grated garlic, the other 12 garlic cloves, and half of the thyme sprigs evenly. Briefly toss to mix in the grated garlic.
- Position the chicken thighs on top of the lemon arrangement, ensuring the skin side faces upward and they are spread out evenly. Pour vegetable oil over the chicken and evenly sprinkle with 1 teaspoon salt and the black pepper.
- Cook in the oven until the chicken skin turns a rich golden brown and a thermometer reads 165°F in the thickest section, which should take around an hour. Move the chicken to a serving dish, keeping the lemon mixture in the baking dish.
- Remove and discard the lemon pieces from the baking dish. Transfer the leftover juices, along with the garlic cloves and thyme sprigs, to a blender. Secure the blender lid but remove the center piece to let steam exit. Cover the opening with a clean towel.
- Blend until smooth, which should take 30 to 40 seconds. Mix in the honey and the remaining 1/4 teaspoon salt into the sauce and stir, adjusting salt or honey to your liking.
- Take the leaves off the remaining thyme sprigs and evenly scatter them over the chicken thighs. Present the chicken with the sauce and extra lemon wedges, if preferred.
