Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1/4 cup extra virgin olive oil
- Juice of 2 fresh lemons
- 4 garlic cloves, minced
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, chopped thyme, parsley, salt, and pepper to create your marinade.
- Place the chicken breasts into a resealable bag or a bowl, pour the marinade over the chicken, and ensure each piece is well-coated.
- Seal the bag or cover the bowl and refrigerate for a minimum of 30 minutes.
- Preheat your grill to medium-high heat (375°F) and lightly oil the grates.
- Remove the chicken from the marinade and place it on the grill, cooking for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
