Ingredients
- 2 tsp Italian seasoning (10 ml)
- 1 tsp garlic powder (5 ml)
- 1/2 tsp seasoning salt (2.5 ml)
- 1/2 tsp mustard powder (2.5 ml)
- 1/2 tsp ground black pepper (2.5 ml)
- 1 (3 pound) whole chicken (1.4 kg)
- 2 lemons
- 2 tbsp olive oil (30 ml)
Instructions
- Set your oven to 350 degrees F (175 degrees C) to preheat.
- In a bowl, mix together the Italian seasoning, garlic powder, seasoning salt, mustard powder, and black pepper, and put it aside for later.
- Take out the giblets from the cavity of the chicken, then rinse the bird well. Put the chicken in a 9×13-inch roasting pan. Sprinkle 1 ½ teaspoons of the spice mix inside the cavity and rub the rest over the outside of the chicken.
- Squeeze the juice from the lemons and combine it with olive oil in a small dish; pour this blend over the chicken.
- Place in the oven and roast until the chicken’s juices run clear, approximately 1 ½ hours, occasionally basting with the leftover lemon and oil mix. A meat thermometer inserted into the thickest part of the thigh, avoiding the bone, should show at least 165 degrees F (74 degrees C).
