A zesty and flavorful dish featuring crispy lemon pepper marinated chicken thighs, perfect for any occasion.
Ingredients
- 6 bone-in chicken thighs (skin on)
- 1/2 juice of lemon
- 1/3 cup extra virgin olive oil
- 2 tablespoons parsley, chopped
- 1 tablespoon honey
- Zest of a lemon
- 1 tablespoon lemon pepper seasoning
- 1 teaspoon red pepper flakes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons salt
- 1 teaspoon chicken bouillon seasoning (optional)
Instructions
- In a small bowl, combine the lemon juice, olive oil, parsley, honey, lemon zest, lemon pepper seasoning, red pepper flakes, garlic powder, onion powder, and salt. Mix well until fully incorporated.
- Coat the chicken thighs with the marinade, ensuring each piece is thoroughly covered.
- For maximum flavor, marinate the chicken for at least 30 minutes, or ideally overnight.
- Once marinated, slice a lemon into thin rounds and place the lemon slices on top of the chicken.
- Arrange the chicken in a baking dish and place it in the preheated oven at 375°F.
- Bake for 35-40 minutes or until the chicken reaches an internal temperature of 165°F.
- Remove the chicken from the oven and let it rest for 5 minutes.
- Garnish with additional chopped parsley and serve hot.
Notes
Marinate overnight for deeper flavor. For extra heat, add more red pepper flakes.
