Description

A zesty and flavorful dish featuring crispy lemon pepper marinated chicken thighs, perfect for any occasion.


Ingredients

  • 6 bone-in chicken thighs (skin on)
  • 1/2 juice of lemon
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons parsley, chopped
  • 1 tablespoon honey
  • Zest of a lemon
  • 1 tablespoon lemon pepper seasoning
  • 1 teaspoon red pepper flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons salt
  • 1 teaspoon chicken bouillon seasoning (optional)


Instructions

  1. In a small bowl, combine the lemon juice, olive oil, parsley, honey, lemon zest, lemon pepper seasoning, red pepper flakes, garlic powder, onion powder, and salt. Mix well until fully incorporated.
  2. Coat the chicken thighs with the marinade, ensuring each piece is thoroughly covered.
  3. For maximum flavor, marinate the chicken for at least 30 minutes, or ideally overnight.
  4. Once marinated, slice a lemon into thin rounds and place the lemon slices on top of the chicken.
  5. Arrange the chicken in a baking dish and place it in the preheated oven at 375°F.
  6. Bake for 35-40 minutes or until the chicken reaches an internal temperature of 165°F.
  7. Remove the chicken from the oven and let it rest for 5 minutes.
  8. Garnish with additional chopped parsley and serve hot.

Notes

Marinate overnight for deeper flavor. For extra heat, add more red pepper flakes.
