Description

A delicious blend of crunchy roasted potatoes, seasoned ground meat, and fresh toppings that creates a satisfying meal for any occasion.


Ingredients

  • 4 medium potatoes, diced
  • 1 lb ground meat (beef, chicken, or turkey)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup corn (canned or frozen)
  • 1 cup black beans (canned or cooked)
  • 1 cup diced bell peppers
  • 1 avocado, sliced
  • 1/2 cup shredded cheese (optional)
  • Fresh cilantro for garnish
  • Sour cream or yogurt for serving (optional)


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes in olive oil, chili powder, cumin, salt, and pepper. Spread them evenly on a baking sheet.
  3. Roast in the oven for 25-30 minutes, until crispy and golden brown.
  4. Cook the ground meat in a skillet over medium heat until browned.
  5. Add the corn, black beans, and diced bell peppers to the meat. Cook for an additional 5 minutes to combine the flavors.
  6. Layer the bowl by placing the crispy potatoes at the bottom. Top with the meat and veggie mixture.
  7. Finish with slices of avocado, a sprinkle of cheese, and fresh cilantro on top.
