Description

A flavorful and nutritious chicken soup with Greek seasoning, lemon, and rice, perfect for weeknight dinners.


Ingredients

  • 1 lb boneless, skinless chicken
  • 6 cups chicken broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tablespoons Greek seasoning
  • 1 can cream of chicken soup
  • 2 cloves garlic, minced
  • 1/4 cup lemon juice
  • 1 cup rice


Instructions

  1. In a large pot, combine chicken broth, carrots, and celery. Bring this mixture to a boil.
  2. Add the chicken, Greek seasoning, cream of chicken soup, garlic, and lemon juice to the pot.
  3. Allow the mixture to simmer until the chicken is cooked through.
  4. Stir in the rice and cook until heated through, about 20 minutes.
  5. Serve hot, and enjoy the leftovers for up to 3 months in the freezer.

Notes

For a creamier texture, stir in the cream of chicken soup towards the end of cooking. Customize Greek seasoning to taste.
