A flavorful and nutritious chicken soup with Greek seasoning, lemon, and rice, perfect for weeknight dinners.
Ingredients
- 1 lb boneless, skinless chicken
- 6 cups chicken broth
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 tablespoons Greek seasoning
- 1 can cream of chicken soup
- 2 cloves garlic, minced
- 1/4 cup lemon juice
- 1 cup rice
Instructions
- In a large pot, combine chicken broth, carrots, and celery. Bring this mixture to a boil.
- Add the chicken, Greek seasoning, cream of chicken soup, garlic, and lemon juice to the pot.
- Allow the mixture to simmer until the chicken is cooked through.
- Stir in the rice and cook until heated through, about 20 minutes.
- Serve hot, and enjoy the leftovers for up to 3 months in the freezer.
Notes
For a creamier texture, stir in the cream of chicken soup towards the end of cooking. Customize Greek seasoning to taste.
