Ingredients

  • – 4 boneless skinless chicken breasts (thinly-sliced)
  • – salt (to taste)
  • – ground black pepper (to taste)
  • – 1 medium sweet potato (peeled and chopped into cubes)
  • – 1 pound (454 g) Brussels sprouts (outer leaves removed, then halved)
  • – 1/4 cup (60 ml) olive oil
  • – 3 tablespoons (45 ml) mustard
  • – 2 tablespoons (30 ml) pure maple syrup
  • – 2 tablespoons (30 ml) balsamic vinegar
  • – 2 cloves garlic (grated)
  • – 2 teaspoons (10 ml) chopped fresh rosemary (or 1/2 teaspoon (3 ml) dried)


Instructions

  1. Set your oven to a temperature of 425℉.
  2. Generously sprinkle salt and pepper on the chicken breasts to season them.
  3. In a glass jar, combine olive oil, mustard, maple syrup, balsamic vinegar, garlic, rosemary, salt, and pepper. Secure the lid and shake the jar well to mix everything.
  4. In a large bowl, combine the sweet potatoes and chicken. Pour around one-third of the maple mustard mixture over them and stir to ensure everything is well coated. Arrange the chicken and sweet potatoes on a large baking sheet and bake for 10 minutes.
  5. While baking, place the Brussels sprouts in the same bowl. Drizzle another third of the maple mustard mix over them and toss to coat evenly.
  6. Add the Brussels sprouts to the baking sheet with the chicken and sweet potatoes. Continue baking for an additional 15-20 minutes, until the Brussels develop a golden, crispy texture.
  7. Pour the rest of the maple mustard dressing over the chicken, sweet potatoes, and Brussels sprouts before serving.
