Ingredients
- – 4 boneless skinless chicken breasts (thinly-sliced)
- – salt (to taste)
- – ground black pepper (to taste)
- – 1 medium sweet potato (peeled and chopped into cubes)
- – 1 pound (454 g) Brussels sprouts (outer leaves removed, then halved)
- – 1/4 cup (60 ml) olive oil
- – 3 tablespoons (45 ml) mustard
- – 2 tablespoons (30 ml) pure maple syrup
- – 2 tablespoons (30 ml) balsamic vinegar
- – 2 cloves garlic (grated)
- – 2 teaspoons (10 ml) chopped fresh rosemary (or 1/2 teaspoon (3 ml) dried)
Instructions
- Set your oven to a temperature of 425℉.
- Generously sprinkle salt and pepper on the chicken breasts to season them.
- In a glass jar, combine olive oil, mustard, maple syrup, balsamic vinegar, garlic, rosemary, salt, and pepper. Secure the lid and shake the jar well to mix everything.
- In a large bowl, combine the sweet potatoes and chicken. Pour around one-third of the maple mustard mixture over them and stir to ensure everything is well coated. Arrange the chicken and sweet potatoes on a large baking sheet and bake for 10 minutes.
- While baking, place the Brussels sprouts in the same bowl. Drizzle another third of the maple mustard mix over them and toss to coat evenly.
- Add the Brussels sprouts to the baking sheet with the chicken and sweet potatoes. Continue baking for an additional 15-20 minutes, until the Brussels develop a golden, crispy texture.
- Pour the rest of the maple mustard dressing over the chicken, sweet potatoes, and Brussels sprouts before serving.
