Ingredients

  • 2/3 cup (160 ml) beef mustard
  • 1/3 cup (80 ml) pure maple syrup
  • 1 tbsp (15 ml) white vinegar
  • 1/2 tsp (3 ml) salt
  • 1/4 tsp (1 ml) ground black pepper
  • 1 1/2 lb (680 g) chicken breast
  • Chives or rosemary sprigs for topping


Instructions

  1. Blend together the initial five ingredients thoroughly. Pour half of this mixture into a large resealable plastic bag or a storage container. Keep the leftover sauce aside, covered.
  2. Cut the chicken into cubes that are about one inch in size. Place the chicken pieces into the bag containing the sauce. Seal the bag and shake it well to ensure the chicken is evenly coated. Let it marinate in the refrigerator for 1-2 hours.
  3. In the meantime, submerge 8-10 wooden skewers in water to soak.
  4. Thread the marinated chicken pieces onto the soaked skewers.
  5. Cook the skewered chicken on a grill set to low heat for approximately 15 minutes, or until the chicken is fully cooked and slightly charred on all sides. Turn the skewers every 3-5 minutes.
  6. Before serving, brush the chicken with the sauce you set aside earlier and garnish with chives or rosemary sprigs. Offer the extra sauce on the side for dipping.
