Ingredients
- 4 boneless + skinless chicken breasts (680g)
- 4 garlic cloves, minced
- 4 tablespoons maple syrup (60ml)
- 4 tablespoons Dijon mustard (60ml)
- 2 tablespoons (30 ml) olive oil + 1 ½ tsp vegetable oil for the baking dish
- 1 tablespoon (15 ml) parsley flakes
- 1/4 teaspoon (1 ml) cayenne pepper, optional
- Sea salt + fresh pepper to taste
Instructions
- Set your oven to 400°F and prepare a baking dish that can hold the chicken breasts flat by applying a thin layer of vegetable oil.
- In a small pot, warm 2 tablespoons of olive oil over low to medium heat. Add the minced garlic and stir until it turns a light golden color and becomes soft.
- Take the pot off the heat and mix in the maple syrup and Dijon mustard. Incorporate the parsley flakes and cayenne pepper, mixing well. Set this mixture aside.
- Arrange the chicken breasts in the oiled baking dish, and gently score the surface with a knife. Season with sea salt and freshly ground black pepper. Pour the maple mustard blend over the chicken.
- Place the dish in the preheated oven and cook uncovered for roughly 30 minutes, making sure to baste with the sauce every ten minutes. Use a meat thermometer to confirm the chicken is fully cooked, aiming for a reading of 165°F. Note that cooking duration may vary based on the chicken’s size and thickness.
- Serve the chicken warm, drizzling the sauce from the dish on top.
