Ingredients
- 1 1/2 lbs (680 g) baby carrots
- 1/4 cup (60 ml) vegetable oil
- 1/3 cup (80 ml) maple syrup
- salt and ground black pepper to taste
Instructions
- Put the carrots in a pot and add enough salted water to cover them; heat until boiling. Lower the heat to medium-low and let them simmer until they’re soft, about 15 to 20 minutes. Drain the water and move the carrots to a serving dish.
- In a saucepan over medium-low heat, warm up the vegetable oil. Mix in the maple syrup and heat until it is warm, about 1 to 2 minutes. Drizzle the mixture over the carrots and toss them well to ensure they are coated; add salt and pepper to your liking.
Notes
- Use olive oil instead of vegetable oil for a healthier and tastier option.
- Add a sprinkle of cinnamon or nutmeg to the maple syrup for a cozy flavor.
- Roast the carrots in the oven for a caramelized texture, instead of boiling them.
