Description
A delicious marinated grilled chicken sandwich that brings family and friends together with its explosion of flavors.
Ingredients
- 1 lb Boneless, Skinless Chicken Breasts
- 1/4 cup Olive Oil
- 1/4 cup Freshly Squeezed Lemon Juice
- 2 Tablespoons Low Sodium Soy Sauce
- 2 Cloves Garlic, Minced
- 1 Tablespoon Dijon Mustard
- 1 Tablespoon Honey or Maple Syrup
- 1 Teaspoon Dried Oregano
- 1/2 Teaspoon Black Pepper, Freshly Ground
- 1/4 Teaspoon Salt (adjust to taste)
- 4-6 Sandwich Buns (Brioche, Ciabatta, or your favorite)
- Lettuce Leaves (Romaine, Butter Lettuce, or Mixed Greens)
- Tomato Slices (Ripe and Juicy)
- Red Onion Slices (Thinly Sliced)
- Cheese Slices (Optional: Cheddar, Provolone, or Monterey Jack recommended)
- Your Favorite Sandwich Condiments (Optional)
Instructions
- In a medium-sized bowl, whisk together the olive oil, lemon juice, soy sauce, minced garlic, Dijon mustard, honey (or maple syrup), dried oregano, black pepper, and salt until emulsified.
- Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes, or up to 8 hours for maximum flavor.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Remove the chicken from the marinade and discard the marinade. Grill the chicken for 5-7 minutes per side until fully cooked, reaching an internal temperature of 165°F (74°C).
- Remove the chicken from the grill, let it rest for 5-10 minutes, and then slice.
- Toast the sandwich buns and assemble with lettuce, tomato slices, red onions, grilled chicken, and cheese if desired. Add condiments and top with the other half of the bun.
