Ingredients
- 2 chicken breasts
- 8 oz pasta (fettuccine or penne)
- 1 cup heavy cream
- 1 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1/2 cup parmesan cheese, grated
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Cook the pasta according to package directions; drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
- Add minced garlic to the same skillet and sauté until fragrant.
- Stir in sun-dried tomatoes and heavy cream, combining well.
- Add parmesan cheese and stir until melted and smooth.
- Slice the cooked chicken and return it to the skillet, then add the cooked pasta and toss everything together.
- Garnish with fresh basil before serving.
