Ingredients

  • 2 large boneless, skinless chicken breasts, sliced thinly
  • Salt and pepper, to taste
  • 2 tbsp olive oil, for searing
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 8 oz pasta (such as penne, rigatoni, or fettuccine)
  • Fresh basil, for garnish


Instructions

  1. Cook the pasta in boiling water according to package instructions until al dente. Reserve some pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season the sliced chicken with salt and pepper, add to the skillet, and cook until golden brown on both sides, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Pour in chicken broth and bring to a simmer. Stir in heavy cream, parmesan cheese, Italian seasoning, and crushed red pepper flakes. Let sauce thicken for 3-5 minutes.
  5. Add the cooked chicken back to the skillet along with the pasta. Mix thoroughly, adding reserved pasta water if the sauce is too thick.
  6. Serve warm, garnished with fresh basil.

Ensure chicken breasts are of uniform thickness for even cooking. Adjust spice levels to taste and consider adding vegetables for variation.
