Ingredients
- 2 large boneless, skinless chicken breasts, sliced thinly
- Salt and pepper, to taste
- 2 tbsp olive oil, for searing
- 3 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional)
- 8 oz pasta (such as penne, rigatoni, or fettuccine)
- Fresh basil, for garnish
Instructions
- Cook the pasta in boiling water according to package instructions until al dente. Reserve some pasta water, then drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Season the sliced chicken with salt and pepper, add to the skillet, and cook until golden brown on both sides, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
- Pour in chicken broth and bring to a simmer. Stir in heavy cream, parmesan cheese, Italian seasoning, and crushed red pepper flakes. Let sauce thicken for 3-5 minutes.
- Add the cooked chicken back to the skillet along with the pasta. Mix thoroughly, adding reserved pasta water if the sauce is too thick.
- Serve warm, garnished with fresh basil.
Notes
Ensure chicken breasts are of uniform thickness for even cooking. Adjust spice levels to taste and consider adding vegetables for variation.
