A delightful, creamy pasta dish featuring juicy chicken breasts, sun-dried tomatoes, and an aromatic garlic sauce, perfect for any occasion.


Ingredients

  • 2 large chicken breasts, boneless, skinless, sliced thinly
  • Salt and pepper to taste
  • 2 tablespoons olive oil for searing
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 8 ounces of pasta (penne, rigatoni, or fettuccine)
  • Fresh basil for garnish


Instructions

  1. Heat the olive oil in a large skillet over medium heat. Season the sliced chicken breasts with salt and pepper and sear for about 5-7 minutes on each side until golden brown. Remove the chicken and set aside.
  2. In the same skillet, add the minced garlic and sauté for about a minute until fragrant. Stir in the chopped sun-dried tomatoes, cooking for another couple of minutes.
  3. Pour in the chicken broth and heavy cream, allowing the mixture to simmer for a few minutes. Stir in the Italian seasoning and grated Parmesan cheese until smooth.
  4. Return the chicken to the skillet, ensuring it gets coated with the sauce. Optionally add crushed red pepper flakes for spice.
  5. Cook the pasta according to package instructions until al dente. Drain and set aside.
  6. Toss the cooked pasta into the skillet with the sauce, mixing thoroughly and heating for a few minutes.
  7. Serve warm, garnished with fresh basil.
