Ingredients
- 2 large chicken breasts, boneless, skinless, sliced thinly
- Salt and pepper to taste
- 2 tablespoons olive oil for searing
- 3 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- 8 ounces of pasta (penne, rigatoni, or fettuccine)
- Fresh basil for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat. Season the sliced chicken breasts with salt and pepper and sear for about 5-7 minutes on each side until golden brown. Remove the chicken and set aside.
- In the same skillet, add the minced garlic and sauté for about a minute until fragrant. Stir in the chopped sun-dried tomatoes, cooking for another couple of minutes.
- Pour in the chicken broth and heavy cream, allowing the mixture to simmer for a few minutes. Stir in the Italian seasoning and grated Parmesan cheese until smooth.
- Return the chicken to the skillet, ensuring it gets coated with the sauce. Optionally add crushed red pepper flakes for spice.
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Toss the cooked pasta into the skillet with the sauce, mixing thoroughly and heating for a few minutes.
- Serve warm, garnished with fresh basil.
