Description

A romantic pasta dish featuring tender chicken, sun-dried tomatoes, and a creamy Parmesan sauce that elevates any dinner occasion.


Ingredients

  • 2 large chicken breasts, boneless and skinless, sliced thinly
  • Salt and pepper to taste
  • 2 tbsp olive oil for searing
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional for spice)
  • 8 oz pasta (penne, rigatoni, or fettuccine)
  • Fresh basil for garnish


Instructions

  1. Season the sliced chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken breasts to the skillet in a single layer. Sear for about 3-4 minutes per side, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add minced garlic, cooking for 1-2 minutes until fragrant.
  5. Stir in the chopped sun-dried tomatoes, allowing the mixture to cook for another minute.
  6. Pour in the chicken broth, scraping any browned bits from the bottom of the skillet. Let simmer for a couple of minutes.
  7. Reduce heat to medium-low, then stir in the heavy cream, Italian seasoning, and crushed red pepper flakes, if using. Allow the sauce to simmer until it thickens slightly.
  8. Return the cooked chicken to the skillet, then stir in the grated Parmesan cheese until it melts into the sauce.
  9. Meanwhile, cook the pasta according to package instructions until al dente. Drain and toss with sauce and chicken.
  10. Serve hot, garnished with fresh basil.

Notes

Using freshly grated Parmesan enhances flavor and texture. Adjust crushed red pepper flakes to taste for spice.
