A romantic pasta dish featuring tender chicken, sun-dried tomatoes, and a creamy Parmesan sauce that elevates any dinner occasion.
Ingredients
- 2 large chicken breasts, boneless and skinless, sliced thinly
- Salt and pepper to taste
- 2 tbsp olive oil for searing
- 3 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, freshly grated
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional for spice)
- 8 oz pasta (penne, rigatoni, or fettuccine)
- Fresh basil for garnish
Instructions
- Season the sliced chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken breasts to the skillet in a single layer. Sear for about 3-4 minutes per side, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic, cooking for 1-2 minutes until fragrant.
- Stir in the chopped sun-dried tomatoes, allowing the mixture to cook for another minute.
- Pour in the chicken broth, scraping any browned bits from the bottom of the skillet. Let simmer for a couple of minutes.
- Reduce heat to medium-low, then stir in the heavy cream, Italian seasoning, and crushed red pepper flakes, if using. Allow the sauce to simmer until it thickens slightly.
- Return the cooked chicken to the skillet, then stir in the grated Parmesan cheese until it melts into the sauce.
- Meanwhile, cook the pasta according to package instructions until al dente. Drain and toss with sauce and chicken.
- Serve hot, garnished with fresh basil.
Notes
Using freshly grated Parmesan enhances flavor and texture. Adjust crushed red pepper flakes to taste for spice.
