Ingredients

  • 3 large chicken breasts, boneless and skinless, sliced lengthwise into thin cutlets
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 6 tablespoon (90 ml) s (50 grams) all-purpose flour
  • 2 tablespoon s (30 ml) olive oil
  • 3 cloves garlic, minced
  • 1 cup (240 ml) chicken stock
  • 1 cup (240 ml) heavy cream (double cream in the UK)
  • ½ cup (120 ml) (43 grams) Parmesan cheese, grated
  • 1 teaspoon (5 ml) chili flakes
  • ¼ teaspoon oregano
  • ¼ teaspoon thyme
  • 1 1/3 cup (320 ml) s sun-dried tomatoes, chopped
  • 1 tablespoon (15 ml) fresh basil leaves


Instructions

  1. Sprinkle the chicken with salt and pepper, coat in flour, and remove any surplus.
  2. In a large frying pan, warm the olive oil and let the butter melt over medium heat. Rotate the pan to distribute the oil and butter evenly.
  3. Cook the chicken in the pan (avoid crowding by cooking in batches if necessary) for 4-5 minutes on each side until they are golden and fully cooked. Move the chicken to a plate, cover it, and set it aside.
  4. Sauté the garlic for about a minute or until it is aromatic. Pour in the chicken stock and use a wooden spoon to scrape and loosen any browned bits from the bottom of the pan.
  5. Lower the heat to medium-low, and stir in the heavy cream along with the Parmesan cheese. Let the mixture simmer for a few minutes, then add chili flakes, thyme, and oregano.
  6. Taste and adjust with salt and pepper as needed, mix in the sun-dried tomatoes, then return the chicken to the sauce, allowing it to simmer and thicken for a few more minutes.
  7. Top with chopped fresh basil leaves and serve warm alongside pasta or rice.
