Ingredients
- 1 1/4 pounds (567g) boneless, skinless chicken breasts
- 1 teaspoon (5 ml) kosher salt
- 1/2 teaspoon (3 ml) black pepper
- 4 cups (946ml) chicken broth
- 1 tablespoon (15 ml) vegetable oil
- 1 medium yellow onion, chopped
- 1 jalapeño, seeded and chopped
- 3 garlic cloves, chopped
- 1 teaspoon (5 ml) chili powder
- 1 teaspoon (5 ml) ground cumin
- 1 teaspoon (5 ml) paprika
- 1 (14.5-ounce) can tomatoes with diced green chiles, undrained
- 1/3 cup (80 ml) masa harina
- 1 1/3 cups (315ml) milk
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (16-ounce) can pinto beans, drained and rinsed
- 1 cup (240 ml) fresh or frozen corn
- 2/3 cup (160 ml) heavy cream
- 1/3 cup (80 ml) sour cream
- Garnishes: shredded cheese, sour cream, diced avocado, cilantro, lime wedges, corn tortilla chips, hot sauce
Instructions
- Prepare the chicken: Set your oven to 350°F. Sprinkle salt and pepper on the chicken. Place it in a greased baking dish measuring 11 x 7 inches. Pour 1 cup of broth over the chicken and cover it. Bake for 45 minutes or until fully cooked. Take out the chicken, keeping the liquid, and shred the meat using two forks.
- Sauté the onion and jalapeño: Warm the oil in a large Dutch oven on medium-high heat. Toss in the onion and jalapeño and cook for 3 minutes. Add the garlic and sauté for another 30 seconds, stirring all the time. Pour in the rest of the broth, the saved cooking liquid, chili powder, cumin, paprika, and tomatoes.
- Incorporate milk and masa: Blend the masa with the milk until smooth. Mix this into the soup. Continue cooking over medium-high heat, stirring often, for about 10 minutes or until the soup starts to boil and slightly thickens.
- Complete the soup: Add the shredded chicken, black beans, pinto beans, and corn to the pot. Turn the heat down to low. Mix in the cream and sour cream. Serve hot with your choice of toppings.
