Ingredients

  • 1 head cauliflower, cut into florets (1 head cauliflower, cut into florets)
  • 1 tablespoon olive oil (15 ml)
  • 1 clove garlic, smashed (1 clove garlic, smashed)
  • 1/4 cup grated alternative cheese (60 g)
  • 1 tablespoon reduced-fat cream alternative (15 ml)
  • 1/2 teaspoon salt (2.5 g)
  • 1/8 teaspoon freshly ground black pepper (0.5 g)


Instructions

  1. Collect all necessary items. Insert a steamer basket into a pot; pour in enough water to stay just below the steamer’s base.
  2. Heat the water until it boils; place cauliflower inside, cover, and let steam until it becomes soft, around 10 minutes.
  3. In the meantime, warm up olive oil in a small pan over medium heat; sauté garlic until it becomes tender, approximately 2 minutes. Turn off the heat.
  4. Move half of the cauliflower into a blender; secure the lid and puree at high speed.
  5. Gradually add the remaining cauliflower pieces, one by one, until a smooth texture is achieved. Incorporate the sautéed garlic, grated alternative cheese, reduced-fat cream alternative, salt, and black pepper into the mixture.
  6. Present and savor!
