Description
A comforting dish of seasoned ground beef wrapped in corn tortillas, smothered in red enchilada sauce, and topped with melted cheese.
Ingredients
- 1 pound ground beef
- 1 can red enchilada sauce
- 8-10 corn tortillas
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 1 cup chopped onions
- 1 cup chopped tomatoes
- 1 cup sour cream
- Fresh toppings (cilantro, avocado, olives, etc.)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, brown the ground beef over medium heat. Drain the excess fat.
- Stir in half of the red enchilada sauce and the onions; cook for an additional 5 minutes.
- Warm the corn tortillas to make them pliable.
- Fill each tortilla with the beef mixture, roll them up, and place them seam side down in a baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
- Bake for 20-25 minutes until the cheese is melted and bubbly.
- Serve hot with fresh toppings like chopped tomatoes, cilantro, and avocado.
Notes
For a vegetarian option, substitute beef with black beans or shredded veggies.
