Description

A comforting dish of seasoned ground beef wrapped in corn tortillas, smothered in red enchilada sauce, and topped with melted cheese.


Ingredients

  • 1 pound ground beef
  • 1 can red enchilada sauce
  • 8-10 corn tortillas
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 1 cup chopped onions
  • 1 cup chopped tomatoes
  • 1 cup sour cream
  • Fresh toppings (cilantro, avocado, olives, etc.)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, brown the ground beef over medium heat. Drain the excess fat.
  3. Stir in half of the red enchilada sauce and the onions; cook for an additional 5 minutes.
  4. Warm the corn tortillas to make them pliable.
  5. Fill each tortilla with the beef mixture, roll them up, and place them seam side down in a baking dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
  7. Bake for 20-25 minutes until the cheese is melted and bubbly.
  8. Serve hot with fresh toppings like chopped tomatoes, cilantro, and avocado.

For a vegetarian option, substitute beef with black beans or shredded veggies.
