Description

A vibrant Mediterranean Chicken Stir Fry featuring tender chicken, fresh vegetables, and bold flavors that brings everyone together around the dinner table.


Ingredients

  • 1.5 lbs chicken breasts, boneless & skinless (cut into bite-sized pieces)
  • 3 tbsp extra virgin olive oil (divided for cooking)
  • Salt & black pepper (to taste)
  • 2 medium zucchini (sliced into half-moons)
  • 2 red bell peppers (diced into chunks)
  • 1 large red onion (sliced into strips)
  • 2 cups cherry tomatoes (halved)
  • 1 cup Kalamata olives (pitted and halved)
  • 4 cloves garlic (minced)
  • 1/4 cup sun-dried tomatoes (chopped)
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • Juice of 1 lemon
  • 0.5 cup feta cheese (crumbled)
  • 2 tbsp fresh parsley (optional garnish)


Instructions

  1. Heat 1.5 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Season the chicken pieces with salt and black pepper.
  3. Sear the chicken in the hot skillet until golden brown and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  4. In the same skillet, add the remaining olive oil. Sauté the sliced red onion, minced garlic, zucchini, and red bell peppers for about 4-5 minutes until vegetables soften.
  5. Add the cherry tomatoes, Kalamata olives, sun-dried tomatoes, dried oregano, basil, and thyme. Stir well to combine.
  6. Return the cooked chicken to the skillet. Toss everything together, ensuring even distribution of flavors.
  7. Drizzle the lemon juice over the mixture and stir in the crumbled feta cheese. Cook for another 2 minutes until heated through.
  8. Serve hot, garnished with fresh parsley if desired.

Notes

For best results, don’t overcrowd the skillet. Cook in batches if necessary. Customize vegetables based on the season for a fresh twist.
