Ingredients

  • 2 pounds (900 g) boneless, skinless chicken breasts
  • 1 tablespoon (15 ml) olive oil
  • 2 teaspoons (10 g) garlic powder
  • 1 teaspoon (5 g) onion powder
  • 1 teaspoon (5 g) dried oregano
  • 1 teaspoon (5 g) dried thyme
  • 1 teaspoon (5 g) dried rosemary
  • 1 teaspoon (5 g) dried basil
  • 1 teaspoon (5 g) dried parsley
  • 1 teaspoon (5 g) ground black pepper
  • 1 teaspoon (5 g) salt
  • 1 lemon, juiced
  • 1 tablespoon (15 ml) lemon zest

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, combine garlic powder, onion powder, oregano, thyme, rosemary, basil, parsley, black pepper, and salt.
  3. Mix the dry ingredients thoroughly to create the herb crust mixture.
  4. Place the chicken breasts on a clean cutting board.
  5. Drizzle olive oil evenly over the chicken breasts.
  6. Sprinkle the herb crust mixture generously over both sides of the chicken.
  7. Rub the herbs and spices into the chicken to ensure even coating.
  8. Squeeze lemon juice over the seasoned chicken breasts.
  9. Sprinkle lemon zest evenly over the chicken.
  10. Let the chicken marinate for 10-15 minutes at room temperature.
  11. Place the chicken breasts on the preheated grill.
  12. Grill the chicken for 6-8 minutes on each side.
  13. Check if the chicken is cooked through (internal temperature should reach 165°F or 75°C).
  14. Remove the chicken from the grill and let it rest for 5 minutes before serving.

Notes

  • For a stronger lemon flavor, marinate the chicken in lemon juice and zest for an extended period.
  • For a smokier taste, grill the chicken over wood chips or charcoal instead of a gas grill.
  • For a spicier kick, add red pepper flakes or cayenne pepper to the herb crust mixture.
