Ingredients
- 4-5 chicken thighs (about 750-900g)
- 1 teaspoon (5 ml) salt
- 1 teaspoon (5 ml) black pepper
- 1 teaspoon (5 ml) garlic powder
- 1 teaspoon (5 ml) onion powder
- Juice of 1/2 a lime
- 2-3 tablespoon (38 ml) vegetable oil
- 8-10 mushrooms
- 1/2 of a yellow onion, chopped
- 2-3 garlic cloves, grated
- 1 teaspoon (5 ml) red chili flakes
- 2 teaspoon (10 ml) dry Italian seasoning
- Fresh thyme sprigs
- 2 cups orzo (about 400g)
- 4 cups (960 ml) water
- 1 cube chicken bouillon
- Feta cheese for garnish
Instructions
- Coat the chicken pieces with the seasonings and lime juice, then brown them in a hot skillet for 5-6 minutes on each side until they achieve a golden crust. Remove from the pan and set aside.
- Using the same pan, quickly fry the mushrooms in the remaining oil for a minute, then add the chopped onions and grated garlic. Cook until they release their aroma.
- Incorporate the chili flakes, Italian herbs, and sprigs of thyme. Next, mix in the orzo, water, and chicken bouillon cube. Adjust the flavors if necessary.
- When the mixture begins to boil, return the browned chicken to the pan, cover, and let it simmer on low to medium heat for 15 minutes. Afterward, drape a towel over the lid and continue cooking on very low heat for another 5-10 minutes.
- Before serving, top with feta cheese and fresh herbs. Pair with garlic sauce for an enhanced flavor experience.
