Ingredients

  • 4-5 chicken thighs (about 750-900g)
  • 1 teaspoon (5 ml) salt
  • 1 teaspoon (5 ml) black pepper
  • 1 teaspoon (5 ml) garlic powder
  • 1 teaspoon (5 ml) onion powder
  • Juice of 1/2 a lime
  • 2-3 tablespoon (38 ml) vegetable oil
  • 8-10 mushrooms
  • 1/2 of a yellow onion, chopped
  • 2-3 garlic cloves, grated
  • 1 teaspoon (5 ml) red chili flakes
  • 2 teaspoon (10 ml) dry Italian seasoning
  • Fresh thyme sprigs
  • 2 cups orzo (about 400g)
  • 4 cups (960 ml) water
  • 1 cube chicken bouillon
  • Feta cheese for garnish


Instructions

  1. Coat the chicken pieces with the seasonings and lime juice, then brown them in a hot skillet for 5-6 minutes on each side until they achieve a golden crust. Remove from the pan and set aside.
  2. Using the same pan, quickly fry the mushrooms in the remaining oil for a minute, then add the chopped onions and grated garlic. Cook until they release their aroma.
  3. Incorporate the chili flakes, Italian herbs, and sprigs of thyme. Next, mix in the orzo, water, and chicken bouillon cube. Adjust the flavors if necessary.
  4. When the mixture begins to boil, return the browned chicken to the pan, cover, and let it simmer on low to medium heat for 15 minutes. Afterward, drape a towel over the lid and continue cooking on very low heat for another 5-10 minutes.
  5. Before serving, top with feta cheese and fresh herbs. Pair with garlic sauce for an enhanced flavor experience.
