Ingredients
- 2 chicken breasts
- 1/4 cup lemon juice
- 2 tablespoons fresh dill, chopped

- 1 cucumber, chopped
- 1 cup cherry tomatoes, halved

Instructions
- In a bowl, mix lemon juice, dill, olive oil, minced garlic, salt, and pepper to create a dressing.
- Marinate the chicken breasts in the dressing for at least 30 minutes.
- Grill the marinated chicken until fully cooked, about 6-7 minutes per side.
- Cook brown rice or quinoa according to package instructions.
- Chop cucumbers, tomatoes, and red onion.
