Description

A vibrant and healthy Mediterranean quesadilla filled with fresh spinach, feta cheese, mozzarella, sun-dried tomatoes, and Kalamata olives.


Ingredients

  • 1 Large Flour Tortilla
  • 1 cup Fresh Spinach, roughly chopped
  • 1/4 cup Feta Cheese, crumbled
  • 1/4 cup Mozzarella Cheese, shredded
  • 2 tbsp Sun-Dried Tomatoes in oil, drained and chopped
  • 1 tbsp Kalamata Olives, finely chopped
  • 1 tbsp Red Onion, thinly sliced
  • 1 tsp Olive Oil or Butter, for cooking


Instructions

  1. Lay a tortilla flat on your clean workspace.
  2. On one half of the tortilla, layer the mozzarella, spinach, feta, sun-dried tomatoes, Kalamata olives, and red onion.
  3. Fold the other half of the tortilla over the fillings.
  4. Heat a skillet over medium heat and add olive oil or butter.
  5. Cook the quesadilla for 2-3 minutes per side, until the tortilla is golden brown and the cheese is fully melted.
  6. Remove from the pan, let it rest for a minute, then slice into wedges and serve immediately.

Notes

Use fresh ingredients for the best flavor. Adjust cooking time based on your stove’s heat to ensure the tortilla is crispy and the cheese melts perfectly.
