This melt-in-your-mouth garlic Parmesan chicken meatloaf combines lean ground chicken with rich flavors of Parmesan and garlic for a comforting and gourmet dish.
Ingredients
- 1 lb lean ground chicken
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1 tablespoon olive oil (for greasing)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan with olive oil.
- In a large bowl, combine the ground chicken, Parmesan cheese, minced garlic, breadcrumbs, parsley, egg, salt, black pepper, onion powder, and garlic powder. Mix until well incorporated.
- Transfer the mixture to the prepared loaf pan and shape it into a loaf.
- Bake in the preheated oven for about 45-50 minutes or until the internal temperature reaches 165°F (75°C).
- Let it rest for a few minutes before slicing. Serve with roasted vegetables, mashed potatoes, or salad.
Notes
Grate fresh Parmesan cheese for best flavor. Experiment with herbs like thyme or oregano for a twist, and consider adding red pepper flakes for a bit of heat.
