  • 3/4 cup (180 ml) grated plant-based parmesan cheese (plus more for topping)
  • 1 large egg
  • 1/4 cup (60 ml) breadcrumbs or almond flour
  • 1/4 cup (60 ml) plant-based milk (or unsweetened almond milk for dairy-free)
  • 1 tsp (5 ml) Italian seasoning
  • 1/2 tsp (3 ml) salt
  • 1/2 tsp (3 ml) ground black pepper
  • 2 tbsp (30 ml) chopped fresh parsley (or 1 tbsp (15 ml) dried)
  • Cooking spray or parchment paper


Instructions

  1. Begin by setting your oven to 375°F (190°C) and prepare a 9×5 loaf pan by spraying it with cooking spray or lining it with parchment paper.
  2. In a spacious bowl, mix together the ground beef, grated parmesan, minced garlic, breadcrumbs, and chopped parsley.
  3. Incorporate the egg, milk, Italian seasoning, salt, and pepper into the mixture. Use your hands or a spatula to blend the ingredients gently until just combined, being careful not to overmix.
  4. If the consistency appears too moist, you can add an extra tablespoon of breadcrumbs or parmesan.
  5. Move the mixture into the prepared loaf pan, pressing it down and shaping it evenly.
  6. Top with some additional parmesan to create a golden crust while baking.
  7. Place in the oven and cook for 40–45 minutes or until the internal temperature is 165°F (74°C).
  8. Allow the meatloaf to sit in the pan for 10 minutes before cutting and serving.
