Ingredients
- 5 lbs ground beef (680 g)
- 4 cloves fresh garlic, minced
- 3/4 cup (180 ml) grated plant-based parmesan cheese (plus more for topping)
- 1 large egg
- 1/4 cup (60 ml) breadcrumbs or almond flour
- 1/4 cup (60 ml) plant-based milk (or unsweetened almond milk for dairy-free)
- 1 tsp (5 ml) Italian seasoning
- 1/2 tsp (3 ml) salt
- 1/2 tsp (3 ml) ground black pepper
- 2 tbsp (30 ml) chopped fresh parsley (or 1 tbsp (15 ml) dried)
- Cooking spray or parchment paper
Instructions
- Begin by setting your oven to 375°F (190°C) and prepare a 9×5 loaf pan by spraying it with cooking spray or lining it with parchment paper.
- In a spacious bowl, mix together the ground beef, grated parmesan, minced garlic, breadcrumbs, and chopped parsley.
- Incorporate the egg, milk, Italian seasoning, salt, and pepper into the mixture. Use your hands or a spatula to blend the ingredients gently until just combined, being careful not to overmix.
- If the consistency appears too moist, you can add an extra tablespoon of breadcrumbs or parmesan.
- Move the mixture into the prepared loaf pan, pressing it down and shaping it evenly.
- Top with some additional parmesan to create a golden crust while baking.
- Place in the oven and cook for 40–45 minutes or until the internal temperature is 165°F (74°C).
- Allow the meatloaf to sit in the pan for 10 minutes before cutting and serving.
