Ingredients
- 1 lb chicken breast, diced
- 1 cup rice
- 2 cups chicken broth
- 1 cup queso cheese
- 1 tablespoon taco seasoning
- 1 cup bell peppers, diced
- 1 onion, chopped
- Salt and pepper to taste
- Olive oil
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken and cook until browned.
- Stir in the chopped onion and diced bell peppers, cooking until softened.
- Add the rice and taco seasoning, stirring to combine.
- Pour in the chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for about 15-20 minutes until rice is cooked.
- Stir in the queso cheese until melted and creamy.
- Season with salt and pepper to taste.
