Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 cup uncooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 2 cups salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional for topping)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the chicken, rice, black beans, corn, salsa, chili powder, cumin, salt, and pepper.
- Pour the mixture into a greased casserole dish.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and sprinkle cheese on top if desired.
- Bake for an additional 10 minutes or until the chicken is cooked through and the rice is tender.
