Description

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup uncooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 2 cups salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional for topping)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the chicken, rice, black beans, corn, salsa, chili powder, cumin, salt, and pepper.
  3. Pour the mixture into a greased casserole dish.
