Description

A flavorful and versatile Mexican chicken breast marinated with spices for a delicious meal.


Ingredients

  • 1.5 lb boneless chicken breast
  • ½ Tablespoon chili powder
  • 1 teaspoon cumin
  • ½ Tablespoon smoked paprika
  • 1 teaspoon oregano
  • 1 Tablespoon fresh cilantro, finely chopped
  • 2 Tablespoons lime juice
  • ½ teaspoon brown sugar
  • 2 Tablespoons olive oil
  • Salt and black pepper to taste


Instructions

  1. Combine olive oil, smoked paprika, chili powder, cumin, oregano, chopped cilantro, brown sugar, salt, and black pepper in a small bowl. Mix until smooth.
  2. Cut chicken breasts into thinner cutlets for even cooking.
  3. Place the cutlets into a freezer bag or bowl and pour the marinade over them. Seal and massage the marinade into the chicken.
  4. Let the chicken marinate in the fridge for at least 30 minutes.
  5. Heat a heavy-duty griddle pan over medium-high heat and brush with oil.
  6. Add marinated chicken and cook undisturbed for 3-4 minutes to achieve a sear.
  7. Flip the chicken and cook the other side for an additional 3-4 minutes until fully cooked.
  8. Remove from the pan and let the chicken rest for 3-5 minutes before serving.

Notes

Marinate overnight for best results. Pair with rice or use in tacos for a versatile meal.
