Description

This Mexican chicken casserole combines vibrant flavors and comforting ingredients that bring everyone closer around the dinner table.


Ingredients

  • 3 cups shredded cooked chicken
  • 6 large corn tortillas, quartered
  • 1 can black beans, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup tomato sauce
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 can chopped green chilies
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Cilantro and lime wedges, for garnish


Instructions

  1. Mix the shredded chicken, black beans, diced tomatoes, tomato sauce, sour cream, green chilies, cumin, chili powder, garlic powder, and seasoning in a large bowl.
  2. Spread the filling mixture evenly in the greased dish.
  3. Layer the tortillas on top, followed by a sprinkle of cheddar cheese.
  4. Repeat the layering process until all ingredients are used, making sure to finish with a layer of cheese.
  5. Cover the dish tightly with foil and bake for 25 minutes.
  6. Uncover the dish and continue baking for an additional 10-15 minutes or until the cheese is bubbly and golden.
  7. Let it cool slightly before garnishing with cilantro and serving alongside lime wedges.
