A comforting dish combining shredded chicken, beans, corn, and cheese, perfect for busy weeknights or gatherings.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 package tortilla chips
- 1/2 cup green onions, sliced
Instructions
- In a large bowl, combine the shredded chicken, black beans, corn, salsa, diced tomatoes, cumin, and chili powder. Mix well to ensure even distribution of flavors.
- In a baking dish, layer half of the tortilla chips at the bottom.
- Add half of the chicken mixture spread evenly over the chips.
- Sprinkle half of the shredded cheese on top of the chicken mixture.
- Repeat the layers with the remaining tortilla chips, chicken mixture, and cheese.
- Place the baking dish in the preheated oven and bake for 30 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and garnish with sliced green onions before serving.
Notes
For added crunch, consider placing extra tortilla chips on the top layer just before baking.
