Description

A comforting dish combining shredded chicken, beans, corn, and cheese, perfect for busy weeknights or gatherings.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 package tortilla chips
  • 1/2 cup green onions, sliced


Instructions

  1. In a large bowl, combine the shredded chicken, black beans, corn, salsa, diced tomatoes, cumin, and chili powder. Mix well to ensure even distribution of flavors.
  2. In a baking dish, layer half of the tortilla chips at the bottom.
  3. Add half of the chicken mixture spread evenly over the chips.
  4. Sprinkle half of the shredded cheese on top of the chicken mixture.
  5. Repeat the layers with the remaining tortilla chips, chicken mixture, and cheese.
  6. Place the baking dish in the preheated oven and bake for 30 minutes, or until the cheese is bubbly and golden.
  7. Remove from the oven and garnish with sliced green onions before serving.

Notes

For added crunch, consider placing extra tortilla chips on the top layer just before baking.
