Description

A comforting casserole combining shredded chicken, black beans, corn, and spices, baked to perfection with melted cheese.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup salsa
  • 2 cups cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine shredded chicken, black beans, corn, diced tomatoes, salsa, cooked rice, chili powder, cumin, salt, and pepper in a large bowl. Mix well.
  3. Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
  4. Top with shredded cheese, allowing it to cover the dish generously.
  5. Bake in the preheated oven for about 20-25 minutes, or until cheese is melted and bubbly.
  6. Let cool slightly before serving.

Notes

For richer flavor, use rotisserie chicken. Customize spice levels by adding jalapeños for heat. Pair with tortillas or a fresh salad.
