Ingredients
- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 cup salsa
- 2 cups cooked rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Combine shredded chicken, black beans, corn, diced tomatoes, salsa, cooked rice, chili powder, cumin, salt, and pepper in a large bowl. Mix well.
- Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
- Top with shredded cheese, allowing it to cover the dish generously.
- Bake in the preheated oven for about 20-25 minutes, or until cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
For richer flavor, use rotisserie chicken. Customize spice levels by adding jalapeños for heat. Pair with tortillas or a fresh salad.
