Description

A comforting casserole that transforms leftover chicken into a rich and creamy dish topped with a crunchy Ritz cracker layer.


Ingredients

  • 4½ cups chopped cooked chicken
  • 4 ounces cream cheese (room temperature)
  • 1 cup cottage cheese
  • ½ cup sour cream
  • 1 (10.5-ounce) can unsalted cream of chicken soup
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried onion powder
  • 1 sleeve Ritz crackers (crushed)
  • 5 tablespoons butter (melted)


Instructions

  1. Preheat your oven to 350ºF and lightly spray a 9×9-inch baking dish with cooking spray.
  2. Combine the chopped chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup in a mixing bowl. Blend until fully combined and creamy.
  3. Spread the chicken mixture evenly into the prepared baking dish.
  4. In a separate bowl, mix the crushed Ritz crackers with the melted butter until fully coated.
  5. Sprinkle the cracker mixture over the chicken layer.
  6. Bake uncovered for 30 to 40 minutes, until the top is golden brown and the casserole bubbles.
