Ingredients

  • 1 (10.5 ounce (298 g)) can cream of chicken soup
  • 1 cup (240 ml) cottage cheese
  • 5 cup (120 ml) sour cream
  • 4 ounce (113 g) s cream cheese, at room temperature
  • 5 teaspoon (8 ml) s Creole seasoning
  • 5 teaspoon (3 ml) onion powder
  • 1 teaspoon (5 ml) garlic powder, divided
  • 5 cup (1200 ml) s shredded rotisserie chicken
  • 1 tablespoon (15 ml) chopped fresh parsley
  • 30 buttery round crackers (such as Ritz®), crushed
  • 4 tablespoon (60 ml) s unsalted butter, melted
  • 1 cup (240 ml) shredded moz zarella cheese
  • 1 teaspoon (5 ml) sliced scallions, or to taste


Instructions

  1. Set your oven to a temperature of 350°F (175°C).
  2. In a medium-sized bowl, mix together the cream of chicken soup, cottage cheese, sour cream, softened cream cheese, Creole seasoning, onion powder, and half of the garlic powder until the mixture is smooth and well-combined.
  3. Gently incorporate the shredded chicken and chopped parsley into the mixture, ensuring they are evenly distributed.
  4. In another medium bowl, blend the crushed crackers with the melted butter and the remaining garlic powder.
  5. Transfer the chicken mixture into an 11×7-inch or 9-inch square baking dish, spreading it out evenly. Evenly distribute the mozzarella cheese on top, followed by the cracker mixture.
  6. Place the dish on a baking sheet covered with foil and bake in the oven until the crackers turn a golden color and the edges start to bubble, approximately 35 minutes. Add scallions on top as a garnish, if you like. Recipe created by Amanda Stanfield.
