Description

A comforting and nostalgic Chicken Rice-A-Roni casserole that brings family together with its rich flavors and creamy texture.


Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 box Rice-A-Roni (chicken flavor)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup butter, melted
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked, shredded chicken with the cream of chicken soup, cream of mushroom soup, sour cream, melted butter, garlic powder, and salt and pepper to taste.
  3. Prepare the Rice-A-Roni according to package instructions.
  4. Once done, stir the prepared Rice-A-Roni into the chicken mixture.
  5. Add the shredded cheddar cheese and Parmesan cheese, mixing until everything is well combined.
  6. Transfer the mixture to a greased 9×13-inch casserole dish and spread it evenly.
  7. Bake for 30-35 minutes, or until the casserole is bubbly and golden on top.
  8. Let it cool for 5 minutes before serving.

Notes

For extra flavor, consider using freshly cooked chicken or rotisserie chicken. You can add vegetables like peas or carrots for added nutrition.
