A rich and comforting dish combining savory miso and sweet maple syrup, perfect for a weeknight dinner.


Ingredients

  • 8 pieces skin-on, bone-in chicken thighs
  • 4 tablespoons unsalted butter
  • 1/2 cup white miso
  • 3 tablespoons maple syrup
  • 1 inch piece ginger (grated)
  • 8 cloves garlic (unpeeled, lightly smashed)
  • 1 tablespoon rice vinegar
  • Black pepper (to taste)
  • 2 pieces scallions (finely sliced)
  • 2 teaspoons toasted sesame seeds (optional)


Instructions

  1. Preheat your oven to 375°F.
  2. Melt the butter in a small saucepan over low heat. Once melted, stir in white miso and maple syrup until smooth.
  3. Add the grated ginger and rice vinegar to the mixture and combine well.
  4. Arrange the chicken thighs skin-side up in a baking dish and season with black pepper. Scatter the smashed garlic around them.
  5. Pour the miso-butter mixture over the chicken, ensuring each thigh is coated.
  6. Bake in the preheated oven for 40-45 minutes, or until the chicken reaches an internal temperature of 165°F and the skin is golden brown.
  7. Remove from the oven and garnish with sliced scallions and toasted sesame seeds before serving.

Notes

For added flavor, consider marinating the chicken in the miso mixture for an hour or overnight before cooking.
