A delightful and comforting crockpot recipe for a moist and tender whole chicken infused with rustic farmhouse herbs.
Ingredients
- 1 whole chicken (4–5 lbs)
- 2 tbsp olive oil or butter
- 1½ tsp salt
- 1 tsp black pepper
- 1½ tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp smoked paprika (optional)
- 1 yellow onion, quartered
- 4 garlic cloves, smashed
- 2 carrots, chopped
- 2 celery stalks
- 1 lemon, halved
- Fresh herb sprigs (optional)
Instructions
- Pat the chicken dry and rub it with olive oil or butter, ensuring every part is covered.
- Season the chicken with salt, black pepper, garlic powder, onion powder, dried thyme, dried rosemary, and smoked paprika, if desired.
- Stuff the cavity of the chicken with the halved lemon and fresh herb sprigs for added flavor.
- In your crockpot, layer the quartered yellow onion, smashed garlic cloves, chopped carrots, and celery at the bottom.
- Place the seasoned chicken breast-side up on top of the vegetables.
- Cook on LOW for 7–8 hours or on HIGH for 4–5 hours.
- For crispy skin, optional broil the chicken for 4–5 minutes after cooking.
- Allow it to rest before carving, and serve with the delicious pan juices.
Notes
Ensure the chicken is completely thawed before cooking. Use fresh herbs as preferred.
