A comforting dish combining rotisserie chicken, fresh spinach, and gooey Monterey Jack cheese, all enveloped in delightful biscuit dough.
Ingredients
- 1 rotisserie chicken, shredded
- 2 cups fresh spinach, chopped
- 2 cups Monterey Jack cheese, shredded
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 2 cans (16.3 oz each) refrigerated biscuit dough, cut into quarters
- 1 cup French fried onions
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, chopped spinach, Monterey Jack cheese, cream of chicken soup, and sour cream in a large bowl. Mix well.
- Fold in the biscuit dough pieces until evenly coated.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake for 25-30 minutes or until the top is golden and bubbly.
- Remove from oven and sprinkle French fried onions on top.
- Bake for an additional 5 minutes.
- Let it cool for a few minutes before serving.
Notes
For added flavor, use well-seasoned rotisserie chicken or add spices to plain cooked chicken. Customize with other vegetables or cheese varieties if desired.
