Description

A comforting dish combining rotisserie chicken, fresh spinach, and gooey Monterey Jack cheese, all enveloped in delightful biscuit dough.


Ingredients

  • 1 rotisserie chicken, shredded
  • 2 cups fresh spinach, chopped
  • 2 cups Monterey Jack cheese, shredded
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 2 cans (16.3 oz each) refrigerated biscuit dough, cut into quarters
  • 1 cup French fried onions


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, chopped spinach, Monterey Jack cheese, cream of chicken soup, and sour cream in a large bowl. Mix well.
  3. Fold in the biscuit dough pieces until evenly coated.
  4. Pour the mixture into a greased 9×13 inch baking dish.
  5. Bake for 25-30 minutes or until the top is golden and bubbly.
  6. Remove from oven and sprinkle French fried onions on top.
  7. Bake for an additional 5 minutes.
  8. Let it cool for a few minutes before serving.

Notes

For added flavor, use well-seasoned rotisserie chicken or add spices to plain cooked chicken. Customize with other vegetables or cheese varieties if desired.
